About us:

Our hotel roots date back to 1869 when we offered hearty hospitality to weary travellers as a station hotel. Fast forward to today, and find a husband and wife run hotel, with a team behind us that we can best describe as ‘our family’.
We are surrounded by history and stories on all sides, including our own rich narrative. The Lovat stands on the site of Kilwhimen Barracks – one of four barracks built back in 1718 to pacify the Highlanders after the Jacobite risings of 1715 and 1719. Just moments from the iconic Loch Ness, we are flanked by breath-taking natural beauty at every turn. We are a hotel that is in tune with its environment and tread as lightly as possibly to minimise our impact on the land. Everything we do is shaped by our ever-changing environment.

Description of the position:

  • Daily Operations Support:
    Assist in the daily operation of the Food & Beverage department by collaborating with the Front of House Manager, Kitchen, and F&B team to ensure smooth and efficient service. This includes participating in pre-service meetings and conducting training sessions.
  • Beverage Creativity & Bar Support:
    Work with the Bar to design seasonally inspired drinks that align with the restaurant’s ethos and complement the kitchen’s menus. Incorporate creativity, innovation, and influence from local environments, using foraged ingredients and local producers.
  • Wine List Design:
    Curate a wine list that highlights UK wine producers and international producers with unique stories that align with the restaurant’s philosophy. Additionally, manage the drinks pairings for tasting menus.
  • WSET Certification Requirement:
    Hold WSET qualifications, essential for ensuring excellence in wine selection and service.
  • Restaurant Standards & Guest Experience:
    Oversee restaurant activities to maintain high standards and consistently deliver an exemplary experience for both guests and employees.
