The\u00a0human tongue\u00a0is limited to the\u00a0primary tastes\u00a0perceived by taste receptors on the tongue\u00a0\u2013\u00a0sourness,\u00a0bitterness,\u00a0saltiness,\u00a0sweetness\u00a0and\u00a0savoriness. The wide array of fruit, earthy, leathery, floral, herbal, mineral, and woodsy flavor present in wine are derived from aroma notes sensed by the\u00a0olfactory bulb.\u00a0In wine tasting, wine is sometimes smelled before being drunk in order to identify some components of the wine that may be present. Different\u00a0terms\u00a0are used to describe what is being smelled. The most basic term is\u00a0aroma\u00a0which generally refers to a \"pleasant\" smell as opposed to\u00a0odor\u00a0which refers to an unpleasant smell or possible\u00a0wine fault.
