They are present in both\u00a0grapes\u00a0and wine, having direct influences on the color,\u00a0balance\u00a0and taste of the wine as well as the growth and vitality of\u00a0yeast\u00a0during\u00a0fermentation\u00a0and protecting the wine from\u00a0bacteria. The measure of the amount of acidity in wine is known as the \u201ctitratable acidity\u201d or \u201ctotal acidity\u201d, which refers to the test that yields the total of all acids present, while strength of acidity is measured according to\u00a0pH, with most wines having a pH between 2.9 and 3.9. Generally, the lower the pH, the higher the acidity in the wine. However, there is no direct connection between total acidity and pH (it is possible to find wines with a high pH for wine and high acidity).\u00a0In\u00a0wine tasting, the term \u201cacidity\u201d refers to the fresh, tart and sour attributes of the wine which are evaluated in relation to how well the acidity balances out the\u00a0sweetness\u00a0and bitter components of the wine such as\u00a0tannins. Three primary acids are found in wine grapes:\u00a0tartaric,\u00a0malic\u00a0and\u00a0citric\u00a0acids. During the course of winemaking and in the finished wines,\u00a0acetic,\u00a0butyric,\u00a0lactic\u00a0and\u00a0succinic\u00a0acids can play significant roles. Most of the acids involved with wine are\u00a0fixed acids\u00a0with the notable exception of\u00a0acetic acid, mostly found in vinegar, which is\u00a0volatile\u00a0and can contribute to the\u00a0wine fault\u00a0known as\u00a0volatile acidity.
