Any particular mentors at that time?<\/strong><\/p>\n\n\n\n<p><span>I was still a chef when I started to be interested in wine, I attended tastings and was impressed by the diversity of wine before I saw a documentary about a sommelier competition and I was consequently really impressed by the skills of the sommeliers even if I never ever thought I would be one of them. <\/span><\/p>\n\n\n\n<p><strong>What specific traits or skills should a Sommelier(e) possess for professional performance and is there any person with that qualities you especially admire within the wine industry?<\/strong><\/p>\n\n\n\n<p><span>I never had one role model, I always looked to several persons for their qualities and personalities. Regarding the professional performance I always said that regardless of the hardware which is knowledge I think that the software (communication, language skills, authority, humour, the ability to read a guest) is more important, it doesn\u00b4t matter what you know if you can\u00b4t communicate it. <\/span><\/p>\n\n\n\n<p><strong>What would be your advice to a young Sommelier(e) i.e. Commis Sommelier(e) where to look finding an adequate position at home or abroad? Any further tips?<\/strong><\/p>\n\n\n\n<p><span>Just be open minded and talk to people, there's plenty of opportunities to find jobs and to learn with the best. <\/span><\/p>\n\n\n\n<p><span><em><strong>Active:<\/strong><\/em><\/span><\/p>\n\n\n\n<p><span><strong>When a customer asks for advice on selecting wine what's in your opinion would be the best approach?<\/strong><\/span><\/p>\n\n\n\n<p><span>I always had the fortunate position of having open minded clients that came and sat down and said let\u00b4s go! Which is what fine dining to day is all about in my view, having the whole experience with the food and wine pairings. Otherwise, I ask the guest for preferences and some kind of budget, when you work with a big list it\u00b4s impossible to have recommendations apart from your by the glass list. <\/span><\/p>\n\n\n\n<p><span><strong>What's your philosophy about glasses? Are you working with well known brands or are you considering new brands as well and how do you determine?<\/strong><\/span> <span>That was always something depending on the restaurant, I mostly worked with glasses I liked with a few exceptions. Today there\u00b4s a vast plethora of excellent glasses to chose from. <\/span><\/p>\n\n\n\n<p><strong>What advice would you give people on pairing wine with food?<\/strong><\/p>\n\n\n\n<p><span>Taste the wine and taste the food and if you like it it\u00b4s good, I try to avoid too much of a scientific approach even though I really enjoy teaching it to students both chefs and sommeliers as I\u00b4m not only a sommelier but also a chef and mainly a food and wine lover working with this every day. <\/span><\/p>\n\n\n\n<p><strong>Should a Sommelier(e) taste the guest's wine?<\/strong><\/p>\n\n\n\n<p><span>Of course, we\u00b4re there to check the quality even if we\u00b4re not supposed to drink a mouthful of the guests expensive wine. <\/span><\/p>\n\n\n\n<p><strong>Where would you suggest a young Sommelier start searching for Sommelier positions on the internet in your country?<\/strong><\/p>\n\n\n\n<p><span>Just go around to restaurants and wine bars and tastings and talk to people, there\u00b4s a lot of opportunities. <\/span><\/p>\n\n\n\n<p><span><em><strong>Wine list:<\/strong><\/em><\/span><\/p>\n\n\n\n<p><strong>What are the key ingredients for creating a wine list for a restaurant and what is your opinion on some ridiculous pricing on wine in restaurants, do you have tips on how to determine mark ups?<\/strong><\/p>\n\n\n\n<p><span>The list must be adapted to the needs of the restaurants and also adapted to what the clients want, you can\u00b4t be too ego about the funky, cool and hip wines that only you and your colleagues like. I always had a discussion with the owners before starting a new venture as I wouldn\u00b4t be able to worl with fixed markups like 300 or 400 %. I think the key is flexibility, you can charge more for certain wines and less for finer and more expensive wines, that was always my point of view, then of course, it\u00b4s more expensive to run a 2 star restaurant at a good address that a cool wine bar in the suburbs so we can\u00b4t look only at price alone. <\/span><\/p>\n\n\n\n<p><strong>How do you manage to stay on top of the changes in the wine industry?<\/strong><\/p>\n\n\n\n<p><span>You can\u00b4t do everything so I chose to do what I like, and where work takes me and leave out some regions, wine styles, trends that I find less interesting or things that are already well established. <\/span><\/p>\n\n\n\n<p><strong>How would a new vineyard get the attention of someone like you to notice their wine and what's the best way for producers to improve their chances of being listed?<\/strong><\/p>\n\n\n\n<p><span>Well I taste a lot of wine and I travel a lot so there\u00b4s plenty of new wine, the issue to find an importer unless you want to bring it in yourself which is another time-consuming activity I still left out. <\/span><\/p>\n\n\n\n<p><em><span><strong>Favourite pick:<\/strong><\/span><\/em><\/p>\n\n\n\n<p><strong>If you were a wine, which variety would you be, and why?<\/strong><\/p>\n\n\n\n<p><span>A Saint-Emilion Grand Cru Class\u00e9 \u2013 powerful and big yet with a dose of finesse, freshness and longevity\u2026 <\/span><\/p>\n\n\n\n<p><strong>What are the top 3 types of wine (your faves) would we find in your home wine collection and what's your desert island wine?<\/strong><\/p>\n\n\n\n<p><span>At home always Riesling Kabinett or dry Austrian, Vosne-Roman\u00e9e or similar style of silky, perfumed Burgundy and of course loads of Champagne. <\/span><\/p>\n\n\n\n<p><strong>Any interesting suggestions about magazines or online platforms?<\/strong><\/p>\n\n\n\n<p><span>I\u00b4m not really updated with everything new but Noble Rot is really fun\u2026<\/span><\/p>\n\n\n\n<p>Andreas Larsson<\/p>\n\n\n\n<p><span>@ by Dominik Kozlik \u2013 Zeitgeist Sommeliers - <\/span><a href=\"https:\/\/www.sommelier-jobs.com\/fr\/\"><span>www.sommelier-jobs.com<\/span><\/a><\/p>","protected":false},"excerpt":{"rendered":"<p>Name: Andreas Larsson Nationality: Sweden At the moment: Sweden Own Website: Andreas Larsson Prerequisite: Please, tell us a little bit about your first encounter with wine &amp; the wine industry?
