Your Role as Sommelier at Sheen Falls Lodge

As a Sommelier, you will play a key role in creating memorable dining experiences through your passion for wine, food, and genuine hospitality.

Key Responsibilities:

• Organise and host engaging wine tastings and cellar tours for guests.
• Deliver an exceptional and personalised guest service experience.
• Communicate with confidence and warmth, ensuring every guest feels genuinely cared for.
• Continuously develop your knowledge of wines and food pairings, taking a proactive approach to learning and refinement.
• Demonstrate real passion for food and wine, using your expertise to promote and upsell selections from the menu and wine list.
• Contribute as a dedicated team player, supporting the Restaurant Manager and the F&B team both during and outside of service.
• Take responsibility for overall wine sales and inventory management.
• Maintain and develop the hotel’s prestigious wine lists.
• Train and inspire all Food & Beverage team members on wine knowledge and service standards.

The Wine Cellar at Sheen Falls Lodge

Sheen Falls Lodge is home to the largest public wine cellar in Ireland, a fact of which we are unashamedly proud. We are seeking an individual who will not only help us maintain our current standard but also improve upon it. Hidden beneath Sheen Falls Lodge, secret stairs lead to our legendary cellar, one of the largest in Ireland. Celebrated worldwide, our impressive wine collection comprises more than 10,000 bottles, sourced from 18 different countries. There are daily tours of this vaulted cavern by our sommelier team, and guests can select their own wine from more than 800 labels. Guests can also experience a private whiskey, Gin or port tasting deep beneath the lodge in the wine cellar.

The Ideal Sommelier

The successful candidate will possess:

• Minimum 2 years’ experience in a quality-driven hospitality environment.
• Fluent English, both written and spoken.
• WSET Level 3 Award in Wine or a Sommelier Diploma, or actively studying towards one.
• Previous experience in a fine dining hotel restaurant.
• Strong understanding of restaurant service standards.
• Excellent presentation and interpersonal skills, with the ability to engage confidently with guests.
• Proven ability in upselling wine and enhancing guest experiences.
• Well-organised, reliable, and a strong team player.
• Flexibility to work shifts as required, including weekends.
• Willingness to undertake manual handling and occasional heavy lifting.
