About Us & Role Overview:

Set within 110 acres of breathtaking Scottish countryside, Glenapp Castle is an award-winning Relais & Châteaux destination. Our reputation is built on exceptional service, timeless elegance, and unforgettable dining experiences.
We are now seeking a passionate and experienced Sommelier to join our ambitious Food & Beverage team and play a key role across our two distinctive restaurants, each offering its own culinary identity and guest journey.
The Role
As a Sommelier, you will be the guardian of our wine experience: curating, presenting and elevating our wine offering to match the calibre of our cuisine and setting. Working closely with our Head Chef and restaurant teams, you will shape thoughtful pairings, inspire our guests, and bring confidence, warmth, and storytelling to every table.
From intimate fine-dining evenings to relaxed yet refined service, this role offers variety, creativity, and the opportunity to leave a lasting impression on guests from around the world.

Key Responsibilities:

• Oversee and develop the wine lists across both restaurants, ensuring balance, quality, and commercial awareness
• Deliver engaging wine recommendations and pairings tailored to individual guests
• Maintain impeccable cellar organisation, stock control, and supplier relationships
• Support and train the wider team to enhance wine knowledge and service standards
• Collaborate on menus, tastings, and special events to continually evolve our offering
• Uphold Glenapp Castle’s exacting standards of service, presentation, and hospitality

About You:

• Minimum WSET Level 3 essential; WSET Level 4 highly desirable - or equivalent, such as a Diploma or Certificate awarded by a Wine School or Academy.
• Proven experience as a Sommelier or senior wine role in a high-end hospitality environment
• Confident communicator with a genuine passion for wine and guest interaction
• Strong understanding of bar operations and spirits knowledge (highly advantageous)
• Calm, organised, and detail-driven, even in a busy service environment
• Commercially aware, with an appreciation for luxury hospitality and bespoke experiences
• Eligible to work in the UK
