There you can discover the bustling heart of the kitchen together with your friends, colleagues or family, enjoying a direct view of the twin chefs and their team crafting your culinary journey. The “Glass House”, which provides a peaceful and natural atmosphere with a beautiful garden view, will take you to the most romantic dinner. Job description:
Service & Guest Experience (The Floor)
Direct Service: Lead by example during service, managing key tables, VIP guests, and complex wine service situations.
Team Support: Act as the floor captain for the sommelier team, ensuring smooth service flow and assisting colleagues whenever needed.
Sales & Guidance: Drive wine sales through expert recommendations, table visits, and memorable pairing experiences, including strategic upselling.
Quality Control: Ensure all wine service standards are upheld—glassware, temperature, decanting, and pouring techniques.
Issue Resolution: Address guest concerns related to the wine program with professionalism and diplomacy.
Team Training
Training & Development: Deliver ongoing training for both sommeliers and service staff, including:
Daily pre-shift tastings and briefings on featured wines
Structured classes on wine regions, grape varieties, and service standards
Practical coaching on sales techniques and menu knowledge
Inventory & Cellar Management
Stock Maintenance: Oversee daily and weekly inventory, including receiving orders, verifying deliveries, and restocking wine stations or front-of-house cellars.
Cellar Organisation: Maintain impeccable order and optimal storage conditions in the main cellar, including a logical bin-numbering or racking system.
May include managing auction purchases or library wine selections.
Inventory Counts: Conduct weekly or bi-weekly stock counts, reconcile discrepancies, and report findings to the Head Sommelier.
Wine Preparation: Supervise all wine-related mise en place—polishing glassware, preparing decanters, chilling wines, and binning new arrivals.
Administrative & Operational Support
Ordering: Place routine orders for wine, spirits, and non-alcoholic beverages according to par levels set by the Head Sommelier.
Wine List Maintenance: Update physical and digital wine lists (new vintages, sold-out items, bin numbers) under the Head Sommelier’s direction.
System Management: Ensure the POS system reflects accurate pricing, inventory levels, and by-the-glass offerings.
⚜️ Key Skills & Attributes
Advanced Wine Knowledge: Ideally holding WSET Level 3/Diploma or Court of Master Sommeliers Certified/Advanced.
Leadership & Communication: Clear, patient, and authoritative communicator with the ability to motivate and guide a team.
Financial Acumen: Strong understanding of inventory control, cost percentages, and profitability.
Organisation & Meticulousness: Highly detail-oriented with strong administrative discipline.
