To maintain this standard of excellence, we operate a refined schedule, opening for dinner Tuesday through Saturday and lunch Wednesday through Saturday, ensuring our team enjoys a consistent Sunday and Monday closure.

We are currently seeking a passionate and visionary Assistant Head Sommelier to join our elite team. In this role, you will be a key guardian of a wine cellar that harmonises small-scale growers with iconic global names and hidden gems. Working alongside our Head Sommelier, you will help drive a beverage programme that is as innovative as it is prestigious.

The Role:

As Assistant Head Sommelier, you will be a key leader on the floor, bridging the gap between our award-winning 15-course tasting menu and our extensive beverage list.

Leadership: Running all restaurant sections to standard and actively training and nurturing junior team members.

Service Excellence: Demonstrating and maintaining elite standards of wine and beverage service.

Creative Pairing: Applying a comprehensive understanding of food and wine chemistry to pair unique styles, including a fundamental focus on non-alcoholic flights (such as our Marigold Milk or Coffee Kombucha).

Operational Management: Assisting with stock logistics, ordering, and cellar management.

• Expérience : A background in a similar high-quality, fine-dining environment.
• Qualifications: WSET Level 3 or equivalent is required.
• Versatility: A deep passion not just for wine and Champagne, but also for liquors, sake, and innovative soft pairings.
• Commitment: An individual who thrives on delivering in-depth knowledge with genuine warmth.
